WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

VANILLA BEAN MUG CAKE

Disclaimer: I have not made this cake. I do not follow KETO as my doctors recommend against it for me. This was shared with me so I am passing it on to those of you who want more KETO recipes. Do not ask me questions about this recipe as I am not qualified to answer them.

3 tbsp almond flour
1 large egg
1 vanilla bean, scraped
2 tbsp Erythitol
1/2 tsp nutmeg
1/2 tsp vanilla extract
1 tbsp coconut oil

Combine all ingredients and microwave in a large lightly sprayed mug until the cake tests done.

Nutritional information: 326 calories, 6 g carbs, 11 g protein, 30 g fat
