WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

HERBED PORK ROAST

1 tbsp Dijon mustard

1 tbsp olive oil mayonnaise

2 tsp McCormick Perfect Pinch Tuscan Rosemary & Sun-Dried Tomato Seasoning

1 tsp chopped fresh parsley

2 lb boneless pork loin roast

Heat oven to 350 degrees.

In a small bowl, combine mustard and mayonnaise. If too thick to spread, thin with up to 2 teaspoons water. In a separate small bowl or cup, combine the seasoning and parsley.

Spread the mustard mixture over the roast and sprinkle the seasoning mixture overall. Place roast in a roasting pan and roast at 350-degrees for 1 hour to 1 hour, 10 minutes. A meat thermometer inserted into the center should read 145-degrees. Remove from oven to cutting board and let rest 5 minutes before slicing to serve.

Yield: 6 servings

Per serving: 281 calories, 28g protein, 0g carbs, 164 mg sodium
