WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

SCRAMBLED TURKEY NACHOS

1/3 cup refrigerated fully cooked crumbled turkey sausage

Nonstick cooking spray

1/3 cup refrigerated egg whites

2-oz no-salt-added blue corn tortilla chips

1/4 cup reduced-fat shredded sharp cheddar cheese

8 cherry tomatoes, quartered

Snipped fresh cilantro, optional

Heat sausage in the mircrowave according to package directions and keep warm.

Coat a medium nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add egg whites and cook for 1 minutes or until egg whites are set, stirring often.

To assemble, arrange chips on two individual luncheon plates. Top evenly with the warm eggs, turkey and cheese. Microwave for 20 to 30 seconds or until cheese just melts. Top with the tomatoes and the cilantro, if using.

Yield: 2 servings Per serving:243 calories, 12g fat (3g sat), 22g carbs, 15g protein

TOMATO CHUTNEY

1 tbsp canola oil
1/2 tsp cumin seeds
1/2 medium onion, chopped fine
2 garlic cloves, minced
2 tsp grated ginger
2 cups tomatoes, seeded, chopped
1 green chili, seeded & chopped, optional
1 tsp ground coriander
1 tsp salt
2 tsp Splenda Granulated

In a small skillet heat the oil over medium heat; add seeds, cooking a few seconds until they stop popping.  Add the onion, garlic, and ginger; cook a couple of minutes until the onion is translucent.

Add the tomatoes, chili, coriander, and salt.  Cook the mixture 3 to 4 minutes until the tomatoes are soft.  Stir in the Splenda.

Allow mixture to cool for 10 minutes.

Pour the mixture into blender container and blend just until of uniform consistency but of a coarse texture.

This chutney may be served immediately or kept refrigerated for up to 1 week.

HOMEMADE APPLE BUTTER

9 cups apples, peeled and cored
1 cup cider vinegar
6 cup Splenda or Stevia Granular
cinnamon to taste

Cook apples until tender; run through a blender or food processor. In a saucepan, mix apple pulp with the vinegar, Splenda, and cinnamon. Bring mixture to a boil and cook for 18 minutes. Pour mixture into hot sterilized jars and seal.

FRESH RASPBERRY AND YOGURT PARFAIT

1/2 cup fresh red raspberries

1 tsp lemon juice

1 cup low-fat plain yogurt

In a small bowl, combine the raspberries and lemon juice, toss.

In a parfait dish, alternate layers of yogurt and raspberries.

Yield: 1 serving

190 calories, 29g carbs, 15g protein, 3g fat (1.5g sat), 15mg cholesterol, 190 mg sodium, 4 g fiber

Dietary Exchanges: 1/2 fruit, 2 milk

MINI BLACK BEAN BURGERS

1 clove garlic, minced

1/2 cup finely chopped onion
1 cup sliced mushrooms (baby bellas work best)
1 can (15-oz) black beans, drained
1/4 cup quick-cooking oats
2 tbsp reduced-fat mayo (I use olive oil mayo)
1/2 tsp dried thyme
1/4 tsp salt
1/4 tsp black pepper

Coat a 12-inch nonstick skillet with nonstick cooking spray.

Add the onion, garlic, and mushrooms to the skillet and cook over medium heat for 5 minutes.

Remove onion mixture to a blender; add the beans, oats, mayo, thyme, salt, and pepper.  Process mixture by pulsing on/off until the mixture is finely minced but not made into a paste.

Remove bean mixture from blender and shape into 8 patties approximately 2-inches in diameter.  Place on a large plate and cover with waxed paper; refrigerate for 30 minutes.

Sauce:
2 tbsp reduced-fat mayo (I use olive oil mayonnaise)
2 tbsp plain Greek yogurt
1 tbsp minced fresh chives

Combine all sauce ingredients in a small bowl; set aside.

Coat large skillet with nonstick cooking spray and place over medium-high heat.  Add the patties in a single layer and cook for 5 minutes on the first side then turn gently.  Cook on second side 3 to 5 minutes until browned.

Remove patties from skillet and serve with the chive sauce.

HOMEMADE BLACK BEAN BURGERS

5 whole-wheat or low-carb hamburger buns

1 can (15-oz) black beans, rinsed & drained well
1/2 cup shredded Mexican blend cheese
2 large egg whites
2 green onions, sliced
1 tsp chili powder
1 tsp oregano
1/2 tsp garlic salt
1 tbsp canola or olive oil

Tear one of the hamburger buns into pieces and place in food processor.  Process until 1 cup of coarse crumbs; transfer to a medium mixing bowl.

In the processor bowl, place the black beans, cheese, egg whites, onions, chili powder, oregano, and garlic salt.  Process to a thick paste, scraping down sides of bowl once.  Add the mixture to the breadcrumbs in the mixing bowl.

Heat the oil in a 12-inch nonstick skillet over medium heat.

Use a 1/2 cup measuring cup to spoon up mixture for patties.  Drop into skillet and press down to form patties approximately 4-inches in diameter.  Cook 4 minutes, turn and cook another 4 minutes or cook until browned on both sides.

Serve on the remaining 4 hamburger buns with a slice of tomato and a leaf of lettuce. Use a low-fat sauce if desired.

EASY DIABETIC SNOW CONES

 

1 cup Splenda granulated

1 cup water
1 regular pkg unsweetened drink mix (ie Kool Aid), your choice of flavor/color

Mix the Splenda, water, and drink mix together until mixed well and Splenda is totally dissolved; freeze until solid.

To make snow cone, remove from freezer and run through an ice crusher.
