1 tsp light butter
1 zucchini, sliced diagonally
1 small yellow squash, sliced diagonally
1 tsp salt-free Greek seasoning
Melt butter in a large nonstick skillet over medium-high heat. Add both squashes and sauté a couple of minutes. Add the seasoning and sauté another three minutes or until tender.
Yield: 2 servings
