WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

CHICKPEA - APPLE SALAD

 Chickpea is another word for garbanzo bean. They are a healthy addition to a diabetic's diet. I suggest this salad as a side to a protein item.

2 garlic cloves, crushed
1 tbsp extra virgin olive oil
2 tbsp lime juice
2 green onions, chopped fine
3 tbsp chopped fresh chives
3 tbsp chopped fresh flat-leaf parsley
1 can (6-oz) chickpeas, drained
2 large red apples, unpeeled and chopped
salt to taste
freshly ground black pepper to taste

In a large mixing bowl, combine all ingredients except the salt, pepper, chickpeas and apples. Whisk until well blended. Add the chickpeas and apples and toss to combine. Add salt and pepper to suit your taste.

Yield: 4 servings
