WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

SAUTEED COLLARD GREENS

 

This is an old Southern Living recipe that I adapted for us diabetics.


1/2 cup chopped onion 

garlic cloves, minced

1 tablespoon chopped fresh ginger
serrano pepper, split*
1 tablespoon sesame oil
1 teaspoon salt 
1/2 teaspoon pepper
(1-lb.) package fresh collard greens, washed, trimmed, and coarsely chopped 
1 tablespoon Splenda granulated
1 tablespoon rice vinegar
1/2 lb. chopped cooked smoked pork

Sauté onion and next 3 ingredients in hot oil in a large skillet or wok 1 minute. Stir in salt and pepper. Add greens; sauté 2 minutes. Add sugar and vinegar; cover and cook 3 minutes or until wilted. Stir in the smoked pork.

Remove and discard serrano pepper before serving.

*1/2 jalapeño pepper, split, may be substituted.
