WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

SPINACH SALAD

 

1 pkg fresh spinach, washed and chopped

1 can water chestnuts, drained and sliced
8 to 10 slices bacon, cut-up & fried crisp
1/2 lb fresh mushrooms, washed & sliced
3 large hard-boiled eggs, peeled and sliced

Dressing Ingredients:
1 small onion, chopped
1/2 cup ketchup
1/2 cup vinegar
2 tsp salt
1/2 cup canola oil
3/4 cup Splenda granulated
1 tbsp Worcestershire sauce

Put all the dressing ingredients in a jar with a tight-fitting lid.  Cover jar with plastic wrap then screw on the lid.  Shake well until ingredients are well mixed.

Mix the salad ingredients together in a large bowl.  Add needed amount of dressing and toss to mix well.  Keep any leftover dressing refrigerated.
