WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

HAM AND THREE BEAN SALAD

1 lb fully cooked ham, cut into bite-sized pieces
1 can kidney beans, drained
1 can cut green beans, drained
1 can cut yellow beans, drained
1/2 cup chopped green bell pepper
1/4 cup sliced onion
1/4 to 1/2 tsp salt
3/4 cup salad olive or canola oil
1/2 cup vinegar
1/4 tsp freshly ground black pepper

Mix ham and vegetables together in a large bowl.

Using a wire whisk, combine the salt, oil, vinegar and pepper. When completely blended, pour over the ham and vegetables. Toss salad well then chill in refrigerator for several hours before serving. Stir occasionally during the chilling time.

Yield: 4 to 6 servings
