4 cups fresh baby spinach
8-oz pkg sliced fresh mushrooms
1/3 cup thinly sliced red onion
1/4 cup reduced calorie or fat-free balsamic vinaigrette
2 tbsp shredded Parmesan cheese
In a large salad bowl, toss together the spinach, mushrooms, onion and vinaigrette. Sprinkle the cheese overall. Best served immediately.
Yield: 4 servings of 2 cups each
