WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

ONION BREAD KUCHEN

This recipe is from a 1987 Country Woman magazine. 

1 loaf frozen bread dough, thawed

1 lb onions, diced

4 tbsp butter

2-oz thin-sliced ham, diced

2 eggs

1/2 cup sour cream

Salt to taste 

Caraway seeds

Roll bread dough out on a greased cookie sheet, forming slight rim around edges; set aside.

In a skillet, sauté onion in butter until clear; mix in ham, eggs, sour cream, salt and caraway seeds. Spread mixture over the dough.

Bake at 350 degrees for 15-20 minutes or until dough is golden brown on top. Remove from oven and cut into small squares.

Yield: 30 appetizers

Per serving: 72 calories, 117mg sodium, 25mg cholesterol, 8g carbs, 3g protein, 3g fat

Diabetic Exchanges: 1/2 bread, 1/2 vegetable, 1/2 fat
