WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

APPLE 'N' BEEF BEAN BAKE

1 lb ground beef or lean ground turkey
2 medium onions, chopped
2 cans (16-oz each) baked beans, do not drain
3 medium-sized tart apples, diced
2/3 cup ketchup
1 1/2 tbsp Splenda Brown Sugar Blend (or equivalent of your favorite brown sugar sweetener)
1 tbsp prepared mustard
1 tsp rubbed sage
1/4 tsp black pepper

In a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain, rinse, drain. Stir in the remaining ingredients and transfer to a greased 3-qt baking dish. Bake, uncovered, at 350-degrees 40 to 45 minutes or until the apples are tender.

I suggest this as a side dish to a lean protein item.

Yield: 8 to 10 servings
