WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

GARDEN SOUP

 

2 cans beef (or vegetable broth for vegetarians)

3 cups water
2 large new red potatoes, scrubbed and chunked
4 medium carrots, peeled and cut into chunks
3 medium zucchini, chunked
1 large green bell pepper, seeded and coarsely chopped
1 large onion, chopped
2 garlic cloves, minced
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp oregano
1/4 tsp basil

In a large saucepan or a soup pot, combine all the ingredients and mix together well.  Bring to a boil over high heat; reduce heat and cook on low for an hour or until the vegetables are tender.

Note: If you want a "meat" soup, add 1 cup browned ground beef that has been drained or a cup of diced cooked chicken.
