1 large egg
1 cup Stevia*
3/4 tsp baking soda
1 cup smooth or crunchy peanut butter
1/2 tsp vanilla extract
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper; set aside.
Mix all ingredients together well and roll into 1-inch diameter balls. Press balls down using the tines of a fork in crisscross fashion.
Bake at 350 degrees 10 minutes or until lightly browned.
