WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

MIGAS CON CHORIZO

9-oz Mexican chorizo sausage, casings removed

2 tbsp olive oil

1 cup onion chopped

1 cup green bell pepper, chopped

2 cups diced tomatoes

2 cups coarsely broken tortilla chips

10 eggs, lightly beaten

1/2 tsp black pepper

Lime wedges for serving

Additional toppings as desired

Cook chorizo in a very large skillet over medium heat until browned, about 5 minutes. Transfer to a paper towel-lined plate; pour off grease. 

Heat oil is same skillet over medium heat. Cook onion and bell epper, stirring occasionally, until tender. Stir in the cooked chorizo, tomatoes and chips. Cook until tomatoes and chips are softened, about 3 minutes.

 Pour the eggs into the skillet and cook, stirring frequently, until eggs are cooked through. Remove from heat. Sprinkle with black pepper and serve with the lime wedges and desired toppings.

Yield: 6 servings Per serving: 456 calories, 19g carbs, 19g protein, 360mg sodium
