Enjoy this salad with a lean protein item such as a grilled chicken breast or pork chop.
1 can (15-oz) white beans, drained & rinsed
1 small red bell pepper, diced
1/2 cup finely chopped parsley
2 tbsps lemon juice
2 tsps balsamic vinegar
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
Combine all ingredients in a large bowl; toss to combine. Let stand 15 minutes before serving.
