WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

ITALIAN STEW

1 1/2 lb beef cubes
2 to 3 carrots, cut into 1-inch chunks
3 to 4 celery ribs, cut into 1-inch pieces
1 1/2 cups coarsely chopped onions
1 can (14.5-oz) stewed or diced tomatoes
1/3 cup minute tapioca
1 1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp Worcestershire sauce
1/2 tsp Italian seasoning
Italian parsley, chopped, for garnish

Combine all ingredients in a 4-quart slow cooker. Place lid on cooker and cook on low setting 8 to 10 hours until meat is tender.

Yield: 6 servings
Per serving: 188 calories, 5 g (1 g sat) fat, 18 g carbs, 3 g fiber, 19 g protein
