WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected. Everyone reacts different to various foods. Check your blood sugar readings so you will know whether or not a recipe works for you! And feel free to take a recipe and adjust it to suit your needs.

COPYCAT RECIPE FOR WHOLE FOODS CALIFORNIA QUINOA SALAD

  • 1 cup quinoa
  • 1/4 cup balsamic vinegar
  • Zest of 2 limes
  • 1 mango, peeled and diced
  • 1 red bell pepper, diced
  • 1/2 cup shelled edamame
  • 1/3 cup chopped red onion
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup sliced almonds
  • 1/4 cup raisins (optional)
  • 2 tablespoons chopped fresh cilantro leaves
  • In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside.
  • In a small bowl, whisk together balsamic vinegar and lime zest; set aside.
  • In a large bowl, combine quinoa, mango, bell pepper, edamame, red onion, coconut flakes, almonds, raisins and cilantro. Pour the balsamic vinegar mixture on top of the salad and gently toss to combine.
  • Serve immediately.

Yield: 4 to 6 servings
Note: Quinoa is a low glycemic food
