6 lb turkey breast, skin removed
2 tsp canola or olive oil
salt to suit your taste and diet restrictions
freshly ground black pepper to suit your taste
1/4 tsp poultry seasoning
1 medium yellow onion, quartered
4 garlic cloves, peeled
1/2 cup water
Rinse the turkey breast and pat dry with paper towels.
Rub the oil over the turkey and sprinkle turkey with the salt, pepper, and poultry seasoning.
Place turkey, meaty side up, in slow cooker.
Place the onion quarters and the garlic cloves around the sides of the turkey.
Place lid on cooker and cook on low 9 to 10 hours (meat thermometer in the thickest part of the breast should read 170 degrees).
Remove turkey breast from the slow cooker to a cutting board; allow to rest for 10 minutes before slicing to serve.

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
