1 tsp fresh dill weed
1/4 tsp freshly ground black pepper
1 tbsp prepared mustard
1 tbsp white wine vinegar
6 tbsp low-fat sour cream
1 tbsp chopped green onion
1/2 lb salmon, uncooked
2 tsp extra virgin olive oil
Combine the dill, pepper, mustard, vinegar, sour cream and green onion, mixing well. Refrigerate mixture while you prepare the salmon.
Brush the salmon with the olive oil and grill over hot coals 5 to 8 minutes per side. Salmon should flake easily with a fork when it is done.
Divide salmon between two plates and top each with half the dill sauce.
Yield: 2 servings

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
