1 pkg (4-serving size) chocolate sugar-free pudding mix
2 cups fat-free milk
1/2 cup chocolate hazelnut spread
1 1/2 cups frozen whipped topping, thawed
Additional frozen whipped topping, thawed for garnish
4 fresh strawberries, halved, for garnish
Prepare the pudding using the fat-free milk according to the package directions. Whisk in the hazelnut spread and refrigerate 15 minutes.
Fold the whipped topping into the pudding mixture and spoon into 8 small dessert dishes. Cover and refrigerate until ready to serve.
Before serving top each dish with a dollop of the whipped topping and garnish with a strawberry half.

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
