4 cups fresh broccoli florets, blanched and cut into bite-size pieces
1/2 cup chopped red onion
3 tbsp reduced-fat olive oil vinaigrette
dash of red pepper flakes, optional
1-oz crumbled blue cheese
In a medium bowl combine the broccoli florets, onion, vinaigrette, and red pepper flakes, if using; toss gently to coat well. Gently stir in the cheese.
Yield: 4 to 6 servings.

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
