WELCOME TO DIABETIC ENJOYING FOOD

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food. I hope this blog will help you to also enjoy food and be healthy. Some recipes are my originals and some I have collected.

EASY VEGETABLE BEEF SOUP

2 cans (10 1/2-oz each) condensed beef broth
1 broth can of water
2 large red potatoes, cubed
4 cups frozen mixed vegetables
1 can diced tomatoes, do not drain
1 cup cubed or shredded cooked beef
1/4 tsp thyme
dash of freshly ground black pepper

Combine the broth, water, and potatoes in a 3-quart saucepan; heat to boiling over medium-high heat.  Reduce heat to low and simmer, covered, about 5 minutes until potatoes are starting to get tender.  Add the mixed vegetables, tomatoes, beef, thyme, and pepper; replace lid and return to simmering.  Cook a few minutes until the vegetables are tender.

Serve with a crusty whole-grain bread, if desired.
