This recipe works great as a side dish or can be used as a stuffing for poultry.
1/3 cup slivered almonds
2 tsp butter
2 medium-size tart apples, cored and diced
1/2 cup chopped onion
1/2 cup chopped celery
1/2 tsp poultry seasoning
1/4 tsp dried thyme
1/4 tsp freshly ground black pepper
3 cups cooked brown rice (cooked according to package directions using either water or chicken broth)
Melt the butter in a large skillet over medium-high heat until lightly browned. Add the apples, onion, celery, poultry seasoning, thyme, and pepper; cook until crisp tender. Stir in the rice and cook until mixture is heated through.
Option: May be baked in a 375 degree oven, covered, for 15 to 20 minutes, if desired.

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
