1 cup light mayo-type salad dressing
4 cups chopped cooked turkey
2 cups shredded Swiss cheese
2 cups whole-grain bread crumbs
2 cups sliced celery
1 garlic bulb, minced
1/2 cup diced green bell pepper
1/2 cup milk
1/4 cup chopped onion
Preheat oven to 350 degrees.
Spray a 2-quart casserole dish with nonstick cooking spray.
Mix all the above ingredients together in a large mixing bowl until well blended. Transfer mixture to the prepared casserole dish and bake at 350 degrees for 35 to 40 minutes until bubbly and lightly browned.

I have chosen this name for this blog because it truly states my story. I am a type II diabetic who most certainly enjoys food. When I was diagnosed with diabetes several years ago, my blood sugar level was over 400. With some oral medications, a lot of research and some trial and error, I have found that unlike my ancestors I truly can continue to enjoy food.
